mayotype and garlic version refer to the fact you can turn almost anything into a mayo and you can add garlic to almost any other thing, and they'll both turn out characteristically similar no matter what you added them to.
sugar isn't a condiment, that's how you get diabetes. same thing with syrups and jams, those are sides and toppings and sauces.
chili pepper oil is an oil, even if it has crushed peppers in it like laoganma.

you're free to put whatever toppings you want on your food or sandwich, but if you classify sugar or sugar sauces like maple syrup as a condiment people WILL put maple syrup on fruit salad and get diabetes eating this all day.
