Catfish coated with flour and cornmeal and fried to a golden yellow color. Anything darker than that I consider overcooked. I usually like the smaller catfish fillets because they seem to have a milder flavor.

Pan fried crappie.

Cod topped with a mayonnaise sauce, bread crumbs and baked.

Melted Butter
Tartar Sauce
Shrimp Cocktail Sauce

Malt Vinegar

Tuna pasta

Mackerel cooked with rosemary on toast.

I also like 'seafood mix ' pasta.
The fishmongers (long ago) I used to go to, would have like off cuts and bits of everything that was for sale in his shop and he would sell these off cuts and scraps and it would make the most amazing pasta dish.
Fish, crab meat and lot of stuff I don't know the name of and it was a good bargain of premium fresh sea food .
