You might also want to have a look at Cyberpunk 2077, another open-world game that has hundreds of quests and side quests.
Thank you however

Games that should be in your price range:

Pretty popular and cozy farm sim with a lot of content and online co-op if you have friends.

Simple singleplayer animal survival(?) game with a story. The story is sweet, the game is kind of short but it has a decent gameplay loop and some replayability (more so than the first game, which is purely a linear story). Can be a little stressful sometimes.

A 2D sandbox set in space. It's light-hearted in tone. Basically, you get to captain your own ship, gather a crew (optional), explore the universe and save it (optional, part of the story). Exploring planets can be fun but may get tedious after a while, especially since they're all procedurally generated and not made by hand. I would recommend this game only if you are open to modding it eventually, as the vanilla game will get a little lame after a while. The most popular mod to expand the game is Frackin' Universe but I would play vanilla first to have a good frame of reference. The game can also be played multiplayer, but there's not many live servers and you'll likely have to search them up online to find them.

Basically 3 RPGs in one; it has combat but can be played casually. More story-based but they're all open world. I'd probably just let the game's page speak for itself tbh.
Also, I've not played Dead by Daylight. I have been told that it can be fun, but it seems to have a bit of a toxic community at times as well. But it seems to have a lot of regular players too? I've seen some people clock some insane hours into it, so it must be good enough to play that much lol.

if RPGs aren't your thing, exploring wyoming's wilderness in firewatch is a pretty healing experience
