State health inspections are annual, with followups in case a location fails and gets temporarily shut down until the flagged issues get fixed. You can file a complaint with the local county office, but given budget and staffing limitations they usually prioritize immediate critical issues like food poisoning, building damage, maybe rodents running amok through the dining area.
Right now, my boss' shop has a giant friggin' hole in the back area of the kitchen, where the grease trap plate would be -- but we're waiting for the manufacturer to ship the replacement so our contractor can install it and fix the floor damage. Been that way for almost three months, we've made due with a 1 inch thick sheet of plywood which is looking gross.
Customers can't see that mess, but if they did you can bet your Quarter Pounder with Cheese that the State health inspectors would be coming down on us like fleas on a dog. Thankfully, the owners got wind of everything and they're coming down on my boss even harder.
It shouldn't be like this. It really shouldn't. Self-enforcement isn't working, outsourcing through franchises isn't working, and more legislation won't work. There's too many people running shops that don't take pride in what they have, or what they do, while people who have the right mindset (even the "bartender gene") don't get promoted and often times pushed out.
Sorry for the rant, but sometimes I really wish there was a way to just turn off my sense of humanity and empathy. I genuinely want to stop caring, because it feels like the only way to succeed in an industry whose core principles involve humanity and empathy.

Guy mentions people not handling food because they are lazy (no idea what he's going on about) so this confused the snot out of me.
