the movies are spin offs but its hard to tell when to watch them, because at some points in the Series, goku or someone else looks like they jumped in power level well that's because of what happened in the movie, there should be a time line on the wiki for when the movies start and stop

It's best if you read the manga, they are the original, this is the link

if you want to watch them, i suggest starting on the first dragonball, it's called "the secret of the dragon balls"

If you don't mind battles that drag out too long and filler, then DBZ is the way to go. Watching DB first is recommended, though. GT and most movies are considered non-canon, but that doesn't really affect the watching experience.

GT is definately the weakest link. It's basically Dragonball: Goku time: if you're not Goku you can't do ♥♥♥♥. Super saiyan 4 is neat, though. A lot better than just getting a red aura and eyes. DB stays good till the last episodes, but DBZ starts getting boresome and repeating in Buu saga mainly because Toriyama couldn't decide who the protagonist should be. Kai is just DBZ washed from unnecessary filler plus remastered animation and new music.

Eventhough the movies don't fit the timeline they're worth watching. The best movies in my opinion are:
Tree of might
The legendary super saiyan and Broly: second coming
Cooler's revenge
Fusion reborn

Don't lie to the poor man, as an avid DBZ fan I can say whole heartedly that there's nothing "boresome" until the Frieza saga ends. I can also honestly say though you can pass on the Cell and Buu sagas if you can't force yourself to watch them, I only kept watching on for Fauloner Studio's work in the music.
You have good taste in the movies though, you can not forget Bardock though, and I thought Wrath of the Dragon was good, though Lord Slug is also one of my personal favorites (if you watch DB first though, you'll see the blatant similarity with King Piccolo, just like (DZ) Garlic Jr. = Emporer Pilaf). I say they're all worth checking out though, how much you like them is up to you.

My own opinion on "canon", everything past the Frieza saga makes no attempt to build atmosphere or make sense. Frieza was the tyrant of the universe, and they built up to that beautifully in the first half of the show, then paid it all off in an amazing climax in the last. After that you get stupid ♥♥♥♥ like Cell coming along saying he's the most perfect thing ever, and a bubblegum monster you can only take a word for being the "most feared thing ever, also here's some more Kai's to back that up".
GT? I won't even comment. Watch if you're REALLY into the series...

My reccomendation on how to watch them? In HD on the new blurays man, it's so incredibly crisp. Makes me sick to see how great it looks cleaned up, and what they thought they were getting away with in Kai.

Nothing past the Frieza saga is canon because Goku blew up with the planet

Even if goku is super fast, the pod was not, and pretty sure that a big explosion would destroy it.

Well, my statement about DBZ getting boresome concerned mainly the Buu saga. Cell saga is one of my favorites with the time traveling and the slight horror elements with Cell's introduction. I didn't include Bardock because if my memory serves me right he appeared in a tv-special, similar to the story of Trunks.

I agree with what you said about Frieza having the best build-up out of the villains. Cell also had good build-up, bur it got bit of ruined when he became a pretty boy after absorbing 18. Imperfect Cell was by far the most intimidating form. The universe of DBZ was pretty much created on the run so every following opponent had to be stronger than Frieza to make the fights interesting and not one-sided. It's is odd that a random scientist like Gero could create cyborgs stronger than Frieza with Earth's technology but hey, that's DBZ for you!
