Anyways, i agree, angels in games are pricks.
Satan himself is an angel which was corrupted by power and hatred towards our own creation. Therefore a fallen angel, who acts like a prick towards human kind, being wicked and rebellious, casted out of Heaven.
An angel itself is simply a powerful being, without a physical body or gender (but normally protraited as male). They can either be good or bad, even neutral, it doesn't matter.
Some are labeled as "Watchers", these watch over mankind, but are not meant to get involved inbetween their fights (some however do break this rule). Therefore most allow humanity to kill each other, due to freewill, not approving of it as such, but rather working out an overall bigger picture rather than focusing on small details which doesn't concern them.
Also, not all angels are the "Christian" view of angels.

I understand that point. But when it is like that, why aren't there more demons showed commiting good things to make them more interesting as well?

I think part of the reason is that good angels would be game-breakers. When they show up, they are quite literally on a mission from God. They pack a lot of firepower along with an almost guarantee that they are backing the winning team. Tension goes out the window. Bringing in good angels also leads to unfortunate religious/moral questions that creators are leery of getting into. No one gets put out if the evil psycho angel decides to torch a hospital, but if a messanger from God has no problem assisting a group that couldn't break the Ten Commandments harder if they had a hammer people start to wonder.
If it makes you feel any better pretend they're all fallen angels that are lying. It's not like any of them look like they're supposed to anyway.

Not sure. Maybe it's some anti-hero thing going on. If angels were good people may complain about things being boring or about religious implications. There are probably some games with them being good and I may just not remember. Some of the stuff you mentioned is pretty old, to be honest. Angel Sanctuary I wouldn't take too seriously anyway, it's some girlie Shonen Ai stuff from what I remember. And there are /is one) good angel(s) in Darksiders too, at least as far as I played through the series (I didn't finish Darksiders 2 yet).
I wouldn't say from the start that angels would be the winners. I mean if you look at the first level of Darksiders, the angels get their butts kicked by the demons and there are far more demons in the game. But I see the point of the religious discussion that could appear. I think Bayonetta solved that problem pretty well by showing an altered version of god in the form of Jubileus.
One thing is funny though. there is Uriel in Darksiders, too and she's on the angel's side there :)
