Minecraft allows you to build pretty much whatever anything you wish to, statues, buildings, roller coasters, mines, cities, pixelart and much more. I myself have created a lot of pixel art in the game (including one of my favorite childhood character, Littlefoot).
Garry's Mod on the other way, is more of a screw around game. Gmod is more like having fun with the Source Engine, you can pose ragdolls, kill a bunch of NPC's, make movies with it, and just have fun.

Minecraft losts it's touch to me after so many dull videos of it was made.
Garry's Mod definitely got boring for me,the multiplayer doesn't even make up for it (Well it sorta does) but it seems to only have randomness covering up what it's made for.
