Because really that's part of it--having been around when they were new. Not nostalgia exactly, since it applies to retro games we've never played before as well. But it's more just, having been there, we have an experiential appreciation for the context. Both in terms of what was cutting edge and what limitations there were. Both of these things can be cool to experience even decades later.
For example, in Mickey Mania for SNES, there was this thin tower in one of the last levels, and you had to climb up some scaffolding around the outside. The game simulated the camera spinning around the castle and staying centered on Mickey by actually rotating the tower. Thing is, the rotation of the tower was remarkably fluid. I'm still not really sure how they pulled it off--whether it was some absurd Super FX voodoo or whether they actually pre-rendered several frames of rotation. Or what.

Funny thing is, I actually happened to see the thumbnail for a video explaining this effect while I looked for this video. Maybe I'll watch that later.
Many of the users in this thread have some good valid points. See if you can adhere to the advice and perspectives given.
You need to work on a better balance in your life.
The seething words that you display here for all of us to see is not healthy at all.
Also if you want to collect old digital games these days I suggest looking into getting a better salary/another job. Life is not fair. It sucks that the games we grew up with have gotten so expensive. But all the hate you display is unwarranted.

Work is good and life is comfortable, lot's of assumptions baked into your comment. Most people have competing hobbies and interests, weighing up these it's just not worth my money buying classic console games because I know that there's a lucrative market for flipping these and if I just went and paid whatever was on the price tag I'd be feeding the beast. If everyone did what you say prices would skyrocket and be a lot worse.
I would rather put this money towards something like a holiday to an interesting place or something creative that involves making something. You are short sighted, you don't see the bigger picture here because your'e blinded by your own ignorance. It's ignorant to say just get more money and buy what you want, that's how prices get inflated.
And you have to understand that it's not a good thing if people have a genuine interest in the hobby of collecting old games they just get priced out without having a chance to enjoy them in their original glory, but these games get gobbled up by people with no interest in playing them flipping them or for bragging rights on their YouTube shelf displays. How is this good for gaming?
You may not like my dark perspective or odious words however they come from a place of truth.
1) Influencers are trash, on that we agree...
2) Game collecting is a thing and as many people who age and populations increase the physical games of old which required no DRM beyond the physical components are highly desirable, thats just the way the world works, supply and demand
2) Agree, these are important factors. Which is why there should be pushback against practices which artificially inflate prices on top of the value naturally increasing over time for the reasons you mentioned.
