Actually they use humanhair in bread. They extract L-cysteine from it.
L-cysteine is an amino acid used to extend the shelf life of commercial bread products

You'd have to properly collect the hair, as only a minor amount of it would be useful for anything. Wigs aren't just swept together and glued hair from a barber shop's floor...
It could be composted though, but given all the chemicals people use on their hair and the remains of all kinds of drugs and meds build into hair after consumption, I'd rather not want human hair in my compost.

If you want to do some questionable art project, take your hair and a bar of soap and felt something. If you grow older, you'll notice that certain hair works better than the hair you wear on your head...

Personally I think it is fine to just use mine to create furniture, clothes and robes..... Some even use it to clean oil.... Hair is pretty unique and has many usages.
