Plain coffee, like other brewed non-alcoholic drinks, generally isn't very pleasurable to drink without something else on the palate. But if the coffee is of good quality then it's palatable on its own, otherwise there's always cream & sugar wherever coffee is found.

As for the routine thing, you're probably thinking of dependance. I remember seeing a poll/study somewhere that indicated that some daily coffee drinkers only drink coffee every day to stave off the feelings of sluggishness from withdrawal when your body's used to a certain intake amount each day.
