What are some games that feature witches? I know Morrigan in Dragon Age and Lulu in Final Fantasy X.

You can blindly pick just about 99% of fantasy games with character customization. There is almost always a witch/wizard class.

This is true for western rpgs and jrpgs, so you really can't go wrong.

Or do you mean games where you specifically play as a witch and only a witch.

I don't mind if the witches are playable or not. Preferably, I'm looking for mature games that explore witchcraft in detail beyond casting a few spells.

Dragon Age Origins is excellent in this regard and it's what I would call the benchmark when it comes to writing and story.

I was always impressed by the writing in the turn based Final Fantasy games, I believe the new Final Fantasy features something similar but the writing is no longer as detailed as previous entries as it's now an action RPG and spectacle fighter.

Minecraft has Witches in it and as a bonus they are great for mob farms.

Literally nearly any fantasy RPG game. Lol.
There are countless amounts of them.
Witches have been around long before video games ever existed so of course they would become a staple from D&D and on.
Hell they were probably even in games before D&D but I'm not old enough or knowledgeable enough to really know that, that's just my assumption based on what I know of the history of the craft.
