Most games now will disable Achievements if you use mods, but I'm not a completionist, so that doesn't matter much to me.
My three/four most modded games are Rimworld, Skyrim, and ATS/ETS2.
Depends on the game and what mods are available. PAYDAY 2 as an example has a good heap of mods from custom guns and maps to more cosmetic stuff like new HUDS as well as cheat mods which I won't name for obvious reasons. PAYDAY 3 I got a different HUD mod for it since I don't think there are that much mods for that game yet.
For mods in online games like PAYDAY I take the approach that as long as you aren't in a public lobby and you're solo or with friends who know what's up, do whatever as long as you don't like intentionally disrupt random players or break games for vanilla players.
Yes, I heavily mod Kerbal Space Program and Minecraft, I haven't gotten around to other games.
Make all the girls look super sexy like in Stellar Blade.

DOTA 2 for instance, wouldn't even exist without mods. And many indie developers were former modders, which made mods for certain games, or romhacks for older console games.
