Final fantasy 16, Metaphor:Refantazio or God of War Ragnarok?

God of War Ragnarok, in my opinion.

I'm working on a new game plus playthrough and it's quite literally the gameplay of 2018 but better, you also have the Valhalla Epilogue which is essentially endless replayability.

I played Final Fantasy 16, and it's a good game, but it doesn't have the replayability of Ragnarok, IMO.

However, I am a huge God of War fan, so I may be a bit biased.

You seem to like Action games with Time Sequenced Combat.
Dark Souls, Nioh, Seiko, Monster Hunter, Elden Ring.

That is what I based it upon. DA:TV will be similar to that now.
