Technically you can roast the brick of spam and eat it like a steak.
I slice my spam super thin (I use a roller type of cheese slicer, but a knife works better) and pan fry them. I put the "chips" in a nice big bean burrito or three.
With bread....
Spam; grilled.

anyhow luncheon meat imo should be fried crispy. Same with sausages ham etc. in cans or tins.
like they cook it or pickle it but can you 100% be sure. Unlike beef jerky which is already fried crispy.
usually the best way to eat it is in a sandwich bread or with stuff like eggs or bacon. Or in a tortilla with cheese.
sides:
brown rice or white rice yes. Also potato chips
Sometimes I smear a ripe Avacado on the bread as a type of sandwhich topping.
Alternative to above can be 'wrapping' in a tortilla.
There also can be more than one kind of meat that is sliced for a sandwhich or 'wrap'- for example, pepperoni and salami, or turkey and chicken, or ham and bacon, or whatever happens to be in the refrigerator at the time :-)
BTW, here, we NEVER "fry" lunch meats for sandwiches or wraps. They are alwasys "cold cut" from pre-cooked meat.... the only time I have eated lunch meats hot is in the case of:
Chicago Style Italian Beef Sandwish
Philly Beef Sandwhich
or
a Ruben ((which has corned beef and sauerkraut)
Otherwise its always cold.
