Even if you covered the entire Death Star in solar panels, it would hardly provide the energy for its internal systems, let alone the weapons. I've compared the use of solar energy in multiple fictional universes in order to come up with a proper answer. In the Total Annihilation universe, solar collectors provide enough energy to produce low-level technology, whereas energy for any advanced tech is gained from geo-thermal plants and later nuclear fusion. In the Metal Fatigue universe, solar panels provide a mere trickle of energy, which is the main resource and is mostly gathered at lava pools. In the Command and Conquer universe, the ECA (a faction from the mod Rise of the Reds) uses a satelite to focus solar rays into a concentrated beam of light and direct it at a reactor on the ground to create the needed heat for nuclear fusion without use of radioactive materials. No matter how you look at it, fusion reactors are definitely the most common. So unless it's used like the ECA does, the Death Star couldn't possibly run with solar energy.

In the end, don't forget that Star Wars belongs to the genre called science-fiction, and technology is often explained in an at least scientific manner, even if it wouldn't work in real life. That's why it's fiction. Please don't forget the science part as well in discussions about science-fiction.
