I think you may just be subconsiously mad that Lucas sold the franchise to Disney, and that's causing you to imagine flaws that don't exist. I recall there being a bit of an uproar when the news of the sale first came out, with fan-boys/girls crying that "Disney will ruin it", before the sale was even final.
The only [minor] difference I can think of is that Rebels is a bit less serious than Clone Wars was.

I honestly don't see much difference.
It's not that the lack of violence that deters me from watching it, its how poorly each episode is executed when you compare it to Clone Wars.
