I guess most turn-based games fit the bill and I'm surely gonna play one of those when I get tired of CK 2 and Sims. :)

or, no wait anything else would quickly turn out to be turn based wouldn't it. hm.
this game, has speed settings and if you choose to have the slowest (but not paused)
it's not too bad for background. you'll lose a bit, and stay away too long might not be all that great, but still.
another that can function like that is "Big pharma"
building a factory... speed settings makes for a long game if you'd like.
*edit* - and both games are plenty fun if .. you like them. as if that wasn't obvious. sorry.
