It really doesn't slow you down that much, although it will tire you out faster.
I'll take the coif for surprise neck strikes tho.
I'd avoid chain because it'd get caught on things like fence nails or chain fence links.
I don't think a leather aventail would stop a full-on 600lb of massiter muscle bite, but it would be good for the occasional scratch. And if it's a collar they might just gnash on the collar instead, which would be safe(r) with a secondary scratch-resistant under-layer. I think most hardened leather would provide a decent barrier otherwise.
But, full leather suits are basically a renaissance+ invention.
There is a pretty good chance you could walk away from a encounter of three or 4 zombies, but anymore the odds are your going to join the horde.

if a zombie falls on you its head is going to be about neck height. the bite is basically reflexive, from them falling on you.
