I live too far south to get poutine, but I very much want to try it someday.
I got gifted a bunch of garlic cheese curds and made my own. Was my first time and twas really good
Never had any.
What's not to like? Fries? Good! Cheese? Good! Gravy? Good!
I just dont get into gravy or roux. Im more of a casserole guy
I've made my own poutine. All people need are fries, gravy, and cheese curds and thats it.
I love poutine (originally from Montreal, now living in the US for 20+ years) -- I make it at home all the time. It's hard to get your hands on genuine cheese curds in the US but some other cheeses make decent substitutes.

Anyone who has ever tried poutine knows it's one of the tastiest culinary masterpieces in the world.
not bad

but not really great

I can get cheese curds in my area, but they're cheddar, battered, and deep fried. I don't think that'd work well on a poutine. They wouldn't melt onto the fries and the batter would get soggy in the gravy.

I'm still not 100% sure what kind of cheese curds or what kind of gravy is traditionally used for poutine. I've always just assumed mozzarella and beef. But I could be way off on that...

What can I replace that gravy with? I don't know if I will find it in local stores and I don't want to order it from the internet.
Gravy is the simplest thing to make. All you need is stock/broth, fat, and flour. Look it up.
Poutine tastes like it sounds. Like Poo. It's literally the worst cultural dish I've ever tried. It tastes just like the ingredients sound like it would taste. You don't even need to try it.

It's steak fries, brown gravy, and squeeky cheese curds. It's nasty.

Brown gravy, and white chedder curds. However, I have used mozza instead, it melts better.

It's not supposed to melt.
