My wife and I are taking Maxine Water's advice and are going to spend next week "up in the hills".

I know this discussion is really about Kamala, but I'm just reinforcing that people will act on the craziest things politicians say.

(Though, after Kamala said that in response to a question about Palestine, I did learn that shrimp is halal. I had no idea! I knew it wasn't kosher though.)

The depths of her intellect are hard for most people to understand. Of course she was trying to unite America using dietary traditions.

I came here expecting a recipe for shrimp and grits. OP derailed his own thread.
Shrimp and Grits are a blank canvas dish. You can make them a lot of ways.

Some things to know...

Polenta and Grits are not the same thing.
This requires constant attention. You can't walk away while cooking this dish. Grits texture is going to depend on you stirring it constantly between cooking other things.
Don't skimp on the Shrimp. A good medium sized to large shrimp (not massive) is best.
Do skimp on the bacon. It should be smoked and cured bacon, but can be cheap. US Bacon if you need the distinction.
I kept it purposefully vague because this dish varies a lot and you should just know how much of these things you like already.

Ingredients
Shrimp, Shelled and optionally deveined.
Bacon (Chopped)
Grits (Not Polenta)
Cheddar Cheese of your choice (Grated fresh)
Garlic
Bell Pepper
Savory Herb of Choice (Parsley, Thyme, Rosemary)
Onion or Green Onion
Chicken Stock (Bonus points if you make the stock yourself using the shrimp shells and vegetable scraps.)
Cajun Seasoning
Lemon

Process
Everything is done on low heat except the bacon.

Start the bacon frying.

Boil half stock/half water or full stock following the ingredients on your Grits package.

Stir in Grits constantly with a whisk while attending to the bacon.

Pull the bacon when cooked through to your desired texture. Keep the fat.

In the fat, put your bell pepper/regular onion (if using it) in and soften to your desired tenderness.

Put in the Shrimp, Cajun Seasoning and a small amount of stock.

Toss in the garlic and green onion, but don't overcook the shrimp.

Make sure to keep stirring the grits between attending the other pan. The grits will be done when they are creamy and aren't hard to bite. When grits are done, turn off heat and remove from stove. Stir in the cheese and cover.

The shrimp will be done after becoming opaque. This happens faster than people realize. If they start to curl, they're probably done.

Toss in the garlic and onion, but don't overcook the shrimp.

Put grits in a bowl, top with the bell pepper/shrimp mixture, squeeze of lemon, and toss on the fresh herbs.

I love grits it's my go to for breakfast.
I usually chop some breakfast sausage, or pour bacon bits depending on what I feel like having.
Then I put in some cheese in it cause I love cheese grits.
Some occasions I put paprika in it.
Grits are also good with chicken too.

Honestly, grits alone are a blank canvas, you can do whatever with the pot.
