It avoided major censoring, unlike most others in the 80s and 90s Dark Age, and the English voices are arguably better than the original, with all the non-Japanese characters having hilarious accents.

I Want To Eat Your Pancreas, Bloom Into You, Dusk Maiden of Amnesia, (...) are all very well worth watching, if not at least being given a try..
Mentioning the genre or subgenre of the anime or what you're looking for in that fiction woulda been helpful..
But, if you're bored and simply don't really care, then that's fine.
.. However, that also presents you with the issue of indecisivness, as to which one of them to watch first due to the possibility of getting a ruined taste by some.

So is Gungrave. The flashback content and main plot blows Bebop out of the water, but Bebop otherwise has better episodic content.
Ghost in the Shell: SAC is a good entrance between that genre and a lot of others, but it tends to have the same pacing as a period drama. Just, the period is 50 years from now.
Texhnolyze is also in that genre but it's kind of dense. Not really easygoing the way Elfen Lied is.

I recommemd only the first four parts if you watch the anime only, if you read the manga too then I recommend part 6 too.
There are two different versions of the beginning of this anime. The first standard version aired on tv has very cheap animations in the first few episodes, those episodes were remade in a much more polished way in the Blu Ray edition, the difference is huge, so either try to find the Blu Ray version if you can or just keep in mind that after just a few episodes the show becomes a lot better if you can't.
