Diddy Kong Racing had some real nice tracks
The feather is a pretty useless powerup most of the time, so much so that it was removed in Mario Kart 64, but it shows what the idea and potential behind it could have been. There are other times the feather comes in handy mind you. They are just few and far between.

i can only think of suzuka circuit from real life and many race sim basically but only barely remember it.
how about gt4 grand canyon? not the best in practical sense but damn it's beautiful.
i also think of wales in dirt rally too... i hope it's wales, and maybe german track due to how simple yet intense the whole concept of gassing up and hit the sharp turn can be.

This is a great track, I just find it too narrow for the most part.
But all in all i played mostly against the clock to figure out the tracks, and car setups.
