Some good shonen I've watched are Yu Yu Hakusho and Jojo's Bizarre Adventure. I'd recommend watching Jojo as the anime adaptation is fairly new, counting the two first parts completely from the eight parts in total. It also helps that each part of Jojo has a new protagonist so you can pick from wherever you want without much confusion. You might miss some references and key plot points by doing this, though.
I agree that Dragon ball>DBZ
Yu Yu Hakusho is probably the best Shonen anime. What really set this show apart from other action shows for me was the relatively intelligent use of dialogue by the main characters. The characters felt more real and fleshed out when compared to the other shows
However, I do still retain my point that MOST shonen animes are awful.
