And not a restaurant at all right now. It's rather inconsiderate to walk in that late and expect to still be served, unless it's a fast food joint and you get what you get. It's general practice that a kitchen closes 15-30 minutes before the restaurant itself closes, giving the cookstaff a chance to clean down.

Nah, it really isn't. You should probably check the menu of many restaurants, they often say when the kitchen closes (especially if they've got a break between lunch and dinner service).
Before covid19, when everything was normal, at most businesses, they at least offer customers to do to go order, that's basically how it was. I see that normally people don't expect to be dine in at 5 mins before closing, but though in my opinion, customers should still be allowed to sit down and eat even 5 mins before closing. Otherwise, they should have put closing time like (7):45 or :40 or : 35 to prevent situation as people walking even 1 min before closing time.
Edit: Unless the owner being lazy to work and wants to close early, I'm ok with that, being an owner, you do whatever you like with your own restaurant, right!
