Tomatoes have sugar in them.[fdc.nal.usda.gov] I mean, the only thing is we don't cook it down nearly as much. It's like, really runny jam.

You can make jam without adding extra sugar. It's just... not very good.

I don´t know about "jam", as we don´t have that term here, but usually it´s about what kind of fruits, which percentage of fruits, and which parts of the fruits (like whole fruit, or only the juice), or that it´s cooked.

The tomato sauce on a pizza is probably not cooked.

As a genuine response; it depends on the recipe for the tomato sauce. I used to cook ours down but we made it from scratch and the raw water content was always higher than preferable for spreading evenly on the pizza.

Hmm - when i made pizza at home (actually i didn´t do it, but my girlfriend). So let´s say we decided to take "chunky tomatoes", as they´re basically tastier than the whole tomatoes. So there´s no need to cook or make an actual sauce, which she did when making pasta - as the pizza goes into the oven anyways.
