Yes, processing meat they'll usually just avoid major arteries and many of the minor blood vessels just aren't visible.

But if you've ever had a chicken thigh/leg, with a purple-black line in it? That's a blood vessel/vein.
Once an animal's bled, the micro-blood vessels effectively collapse since they don't have pressure to keep open anymore. And butchers tend to de-vein or cut around the major ones to make the cuts look better.
Theres everything in flesh, and it tastes so good. Veins, blood, fat, connective tissue, you name it.

I'm that weird dude who won't trim the fat off steak because I like chewing it. However gristle/cartilage is a much more difficult chew.

After seeing the price of high quality animal fat for cooking (turns out he seed oils are hurting us) I'd be rendering all that fat that I could.

Yeah I can see that, and people here DO save bacon grease for cooking a lot. I don't really anymore, because I've taken notice of my health as I get older so I cut out a lot of fatty foods.

meat is mostly muscle and most people usually drain the blood meaning the veins and arteries shrink

ofc things like kidneys the neck and THE HEART all have more visible veins and blood vessels you can see.

the vessels are more for the neural network system of your body as well as the circulatory system
it's not really a part of the muscular system
