I've tried a few mods for Skyrim but didn't really like most of them.
There was a Khajiit overhaul in Skyrim that showed a Khajiit woman with huge bozongas. I tried it out and all my Khajiit were still flat. Found out they had a whole bunch of other mods installed to do that, and their mod basically did nothing.
That's the kind of crap I find in the mod community.
One of the most popular mods for Mount & Blade Warband is Prophecy of Pendor. They put a dude with full plate armor in the first quest and you can't beat him with your starting weapons. So you have to find gold to get a good weapon to beat the first quest. The comments in the mod are chock full of people being wiped out by huge armies of heretics - and yes I met a demon summoner army in my first few days of gameplay and they crushed my band of peasants.
99% of fan-made mods are just jank.
Saying vanilla is a flavor i kind of like saying sweet is a flavor.
Vanilla is technically a flavoring, but it's also an ingredient added by default to many recipes so vanilla flavor ends up being the plainest and most basic flavor of such foods. This is especially true of ice-cream.
Factorio also has a lot of excellent mod expansions that completely change the experience. Krastorio, Space Exploration, Nullius, Pyanodons.
Sounds like a really boring way to play. I see you own Terraria; you've never tried out the offical Tmodloader with Calamity and Thorium, or even MagicStorage and such?
Just because the devs designed something some way doesn't mean it's a good way to play.
The only game I had used mods for was for Trove.

that said I have been amodder for morrowind for over 2 decades and I quadrupled the installation size, number of quests, complexity etc in that game...
but basicly thats only cause oblivion ans skyrim just are dumbed down sucking games that only add things modders already had added in morrowind..
if they had released a game that was as good as morrowind.. with all that modded taken lessons from and added + a heck of a ton more I happely play vanilla..
