I'd never thought about fried nuts and onions as a dish. But on top of rice or noodles with some greens and peppers tossed in? It could work. If you send me a semi-easy recipe I'll try it and report back.

You can bake cashew nuts on a pan without oil.
By stirring them continually until it turns golden brown.
You can wait for them to cool down and put them in a container.

When you want to eat for a portion. You can spring lightly on salt.
You can eat them with different kind of herbs.
Like garlic, onion, spring onion, chili, holy basil or sweet basil.

I like cashews but they tend to make me sick a day or two after eating them. I was actually just tempted to eat something with cashews a few minutes before you posted this.
