Terarria is an outstanding choice for this.
Many colony/survival/build/craft games fit right in with your description, too. (As long as they have co-op, that is.)
The Diablo series is a good choice if she likes ARPG games. I'd add "Grim Dawn" to that list.
Path of Exile is a free to play ARPG with co-op/multiplayer.
Baldur's Gate 3 would be excellent, too. You could start up a multiplayer campaign and each play character in the group.

Baldur's Gate 3 has an extensive campaign with good replayability thanks to character builds and multiple sub-plots/storylines.

Also, X-Men, Simpsons, Golden Axe Trilogy, Streets of Rage Remake and 4, Bishoujo Senshi Sailor Moon, the other TMNT beat-em-ups, (patched) Battletoads, original Ninja Gaiden, Bad Dudes, Moonwalker arcade, etc.
Classic beat em ups might not have be known for great campaigns, but are great fun for couples.
