And recorded (mic) voice can sound a bit unwell for some people but you can always use voice changer for extra security and comfort! (Don't adjust it to be creepy tho!)
What matters is how it sounds like to others; We hear and see ourselves differently than others, for some reason.
a little at a time.
Start by literally just saying, "good luck have fun everyone!" and unplug your mic. There you go.
when people say "thanks you too!" or "how is everyone?" in response it's going to feel more and more NATURAL to respond - you don't have to right away. Just do it when you feel comfortable and want to.
Remember that you are essentially anonymous. If a conversation goes poorly you can mute and move on, or just not talk anymore. the great thing about working on your anxiety is there isn't too much consequence as your self esteem is already shattered
Grow from there brother, good luck with your anxiety.

I mean, how can you speak with total strangers irl but get anxiety attack when using a mic on a game room? It sounds condescending but it's not. That's just the way I express myself. Get some help, dude.
Self-Image corruption ofc! In this case, self image about the voice.
I think he will be fine if didn't hurry to speak/respond with the mic. Speaking whenever you want and avoiding small talking for a while will help a lot.
Where is a protocol droid when you need one?
