From my biaised point of view, an open-world top-down RPG is:
1) Totally doable (VERY simple example: https://editor.gdevelop.io/?project=https://resources.gdevelop-app.com/examples/top-down-rpg/top-down-rpg.json)
2) Also not the easiest game type for a new game creator (combat system needs some advanced logic, which is totally accessible with GDevelop, but it will need more time to be created and tested).
As for the engine itself, various games on Steam have been made with it, a lot of indie games and promotional games for big brands - you can't go wrong :)
