Pigs have an incredible amount of fat in their head. It's tasty but needs to be simmered until it denatures into a gelatin. It's a little porky though, like most pig products.
Probably how I ended up enjoying stuff like pozole and calabeza tacos over in Mexico, both use animal brains (and/or other head organs) as ingredients. Sounds terrible, tastes delicious.

humans do eat animal brains. like all brains, it is gelatinous and needs to be prepared and cooked a certain way. Animal brains contain a large amount of stuff that's good for you as well. it's not much different than eating kidneys or a liver in an animal. the only reason some people find the whole thing disgusting is because it's cooked brain matter instead of a liver.
but you must also not forget that skin is an organ as well and bacon is essentially the whole layer of skin and connective tissue fried and eaten, typically found on the belly or back of the pig once fattened up.
Personally I prefer chicken. Pork is good too.
On topic, I am curious about it.
I prefer the British name for it - Brawn. Doesn't sound quite so bad.
