the case where a store allow you to redeem your games on another platform when it's close are rare , bethesda did it when they closed down their own store but don't expect it to be the norm.

The only truly safe stores whose games survive a storefront sunset are GOG and itch.io (for downloadable titles).
They sadly pay for exclusives. Alan wake remastered, alan wake 2, dead island 2, I'm sure there's others. Despicable? Yes, but those are good games by good studios and it would suck if they ceased to exist.
To answer op, these other stores will likely go the way of bethesda's games launcher, all your purchases will get transferred to steam. In epic's case maybe not, but you have to remember that at the end of the day games using their engine are still being sold on steam, I'm sure they wouldn't want to sour that relationship, especially after a defeat.

Typical Classic C****nist C*****e Expansionist agenda. You become very happy when you see their smiles upon starting a fresh business partnership,
only to be owned by your early "partners" 20+ years later. Sometimes even closer.
When the service is gone, it means the EULA is also gone. Because of that, you can make them work yourself without violating the rules.
If you asked how to make your games work without the launcher, just go googling it. It isn't piracy if you had paid.
