I mean...I can simply on the Vegan part because those existed as a group as far back as the Greeks, it was even a practiced part of their culture. That said however, how does atheists have anything to do with veganism?

Honestly you might not be wrong as their claim was that reincarnation implied you may be eating a cow that is your grandma which was literally the excuse the Greeks used for it, so the irony is that to the Greeks, Veganism was more of a religious act then it was actually about not eating meats ironically.
