Yeah, and there's a lot more I'd eat than just that.
I see kangaroo meat being sold at the local Lidl. I wonder what the giant Aussie rat tastes like?

Hunting if I had to guess? Australians can lower the kangaroo population but can't win a war against a bird.

It's red meat, so you can probably treat it similar to beef. Apparently on Wikipedia, there's an image of it being served in Finland like a cut of meat with vegetables and sauce and you can also make jerky out of it.

Depends on the species.
The big red and grey ones are considered pests and have no real enemies as European settlers kindly killed native predators to protect livestock and also because these big ♥♥♥♥♥♥♥ are just such absolute units to begin with. They can shred dogs mid-air and that's the best threat left besides humans. If it wouldn't be for hunting, their populations would be out of control in no time destroying not only crops but the entire already unbalanced ecosystem.
Maybe they should introduce lions to 'Straya. ;P

It's usually the smaller wallaroos and wallabies that are more at risk, but I don't think those are fair game anyway.

What's it taste like? How's the texture?
I've heard people say it's an acquired taste. Not everyone likes it
