I think it's advisable to not approach wild animals at all.
Want it or not the food you eat has bugs of all kinds, especially ones too small you cannot see without a microscope.
Heck, in many places vegetables are still grown using manure, and some of said places workers do their necessities not far from the vegetables, and then touch them without washing the hands...
I've heard that even two or three servings of Vegemite isn't enough calories or fats to digest the muscle tissue alone, and that the toxin-containing portions don't break down until the meat is deep in your digestive tract.
That's why we are hanging many game and beef before eating.
Roos tend to air-dry and retain the acids, rather than drain.
Cows and most 'edible game' like deer are different.
Cows have a large component of aerobic muscle, and owing to their bulk tend to favor drainage systems rather than retention, in order to avoid hemerrhoids in their body. They're used to wet climes.
Deer's acid decomposes and tenderizes the meat when aged, and also readily denatures in soups, roasts, etc. They're especially unusual in this regard for anaerobic-based game. They also prefer to push acids rather than pull them.
Small anaerobic protein game like squirrels don't have enough of anything for it to be a problem, and are typically so small that whatever is there basically falls out as soon as you open it up.
Roos are a combination of everything you just don't want in your meat.

Just like with venison and cheval - and really all meat - it should be consumed in moderation. Nobody in their right mind would eat these meats everyday for no reason. They're something for special occasions or as a treat, not a nutritional base.
