I would not do so for a rodent.
When you get above the rodent, it gets more tricky. If we were looking at a pet, I have put myself between my dog and a much bigger and very angry bulldog and didn't really think anything of it.
I am not going to stop hunters from going out to hunt.
If I saw someone raise a gun to an elephant (as an example) in my local zoo, hell yes I would do what I could to stop them.
So it really depends on the animal and the situation.
