I prefer medium rare, but I will always take rare over well done.
No not all mold is penicillium, and even if it were that or aspergilium you still technically have to refine it in order to remove the mycotoxins and thus make it safe for consumption by those who don't willingly go out of their way to poison themselves as to build a tolerance to said poisons.
Either way, I don't mind rare meat. If it's undercooked that's when I might have an issue. Doubly so if it's not beef.
Me personally I don't eat rare beef. I do however eat it medium rare. I'm more of a chicken person.
