I've never touched Doom, but I grew up with Quake and do carry the insane reflexes and flicks from Quake to other FPS videogames.. Which from what I've been able to observe throughout the years, most players do lack.
Quake is with Monsters and Aliens.
both are about grabbing shotgun and rocket launchers and shooting things dead.
Doom is Doom
Quake is Doom Jr.
In the original Doom you can't look up/down. The enemies are only sprites.
Quake has NiN Soundtrack!!
Quake is about Humans getting revenge on the Strog for attacking earth and kidnapping 2/3rds of the human race and turning them into more Strog, since Strog can't reproduce and instead turn other organic things into them by process of genociding that race. Humans find the world and invade it, nearly fail outright till Not-Doom-Guy solo's the entire Strog military force and wins.
For the record Doom Guy goes to hell and fights Satan
Dagger (Quake Doom Guy) literally disables a black hole warp machine, destroys the planets largest anti-space gun and proceeds to fight the Strog leader on a asteroid base.
(This is ignoring Quake one however being about the war against Lovecrafts gods which is the odd duck)
Quake is actually 3d. Fully textured polygons.
Fun facts:
While I associate Quake more as an arena shooter focused on multiplayer, even though the first Quake games were single player shooters as well.
Also quake has a quicker pace than doom. Or it's just the countless quake speedruns and rocketjumps that make me believe that.
However it really depends on the era of when to compare these games. They started off similarly but went parted ways as time went on.
Anyway, I was the kid who rather played Unreal and Unreal Tournament at that time.

Quake came after Doom and didn't have any of those limitations. It went full blown 3d models and everything.
Additionally the 2 games had different settings and atmosphere.
Quake is more like atmospheric and quiet. Because the games use 3d models, not as many enemies are on screen making them a bit tankier.
Quake has a bit more complex level design/setpieces, and is a lot more linear than DOOM is. Also a bit more movement focused with stuff like jumping (especially in the multi-player aspect)
