Our farmlands right now are the size that they are, because they need to feed all the animals that we keep around for meat.
The farmlands required to sustain a vegan population would be miniscule in comparison.
A lot of grain from wheat farms for example go directly to feeding the animals on animal farms.
I think it's less than 30% of all wheat that actually goes to humans. And that includes ALL wheat and ALL humans. That small fraction of our supplies of wheat gets us all the bread we want and then some. Most of it goes to waste, in fact, since not a 100% of bread gets bought. Most of it is surplus.
If everyone went towards one path, the price and ability to supply it would increase beyond our means - leading people to buy / eat what they are able in order to satisfy themself.
If all animals somehow went extinct, and plants were the only available option, then we would run out of the ability to produce enough food - animals contribute a lot to making fertiliser, and producing food from otherwise non-arable land (animals can eat grasses and such - we can't, but we can eat those animals)
exactly, the amount of land and water to sustain the meat and dairy industries dwarfs that which is used for crops.
Not to mention the emissions from it.
I'm sure that in winter at -40° your crop will grow really fast.
