He's just a typical chef. They usually panic and take it out on the staff because it's their reputation on the line and when you're the top person in the kitchen, you sometimes feel like everyone else is incompetent and nothing will get done right unless you do it yourself. It's a nightmare job to have when you actually care about it.

TV Ramsay is a foul tempered blowhard, real Ramsay is an okay bloke if a wee bit grumpy. All the TV stuff is scripted. I mean if you watch very closely there's a formula per show and a formula per episode. His online presence? It's just him having fun with it. Why not. He needs some fun, he's Scottish.

but during the times that he placed bread onto peoples ears and yelled at them etc?
eh just for the show, to show that chefs tend to get bossy and aggressive.

his wheelhouse is more like, steaks and roasts and potato stuffings. slightly less rich french cooking, done well.

i get to say he's an ok chef because most of the recipes i tried from him were awesome tbh
