I always liked Extreme-G , even if people say it's just a ripoff of F-Zero.
The most detestable item in Super Mario Kart is the Boo, which turns you invisible and steals the other player's item at the same time. It is specifically designed to screw over the other human player in a game that could only have up to two human players. However, the Boo only appears in multiplayer, and it is not quite as detestable as the blue shell.
The blue shell is usually only given to the player in last place, and only ever targets the player in first place, so usually what happens is that it screws over the person in the lead for no apparent benefit to the player who used it. This is especially so if it's the last lap and the last place player has no chance of catching up to first place.
I like Super Mario Kart, but let's just say whomever came up with the whole blue shell idea was the worst kind of prankster in game design.
MK is for multiplayer. Its singleplayer game is the bare minimum for a racing game (and even that's being generous). Plus its whole item mechanic aims to keep things balanced, which again is fine for a family party game, but as a result MK is a game that actively punishes skillful play by limiting your options tremendously.
If you're good at the game, you will never see any of the fun items and will see exclusively bananas, coins, and maybe a shell. Oh boy, the thrilling variety.
if kart racers are countable here though, Sonic All Stars Racing Transformed outbeats any mario kart no buts. Maybe tied with Crash Team Racing if you want a VERY skill-based kart racer.
If reflexively you shot it off the moment you get one, it's likely to just bounce off the nearest wall and be wasted. You have to give it some space to get locked on.
Arcade versions were fun. But GameCube version was like...next level
All Burnouts are great, even Fairhaven.

Midnight Club? Shame only MC2 had a PC release - and that is no longer sold.
MCLA is a lot like GTA 5, but no shooting and you can't get out of cars. I really like it. Some mods for GTA 5 can kinda turn it onto an MCLA clone of sorts, but that can't beat the original.
