You spend most of the game playing in human form, but in the later portions of the game, after defeating Lubella for the second time in Whiteleaf Memorial Park, you get can get an item called the cat sphere. It does not change the core gameplay very much, and its main purpose is to let Kaho go in through small passages like the morph ball in Metroid.
In her kitty form, she looks like this:
You can play through most the rest of the game as a cat though, only ever changing back to human form if you need to use consumable items, climb ladders or shoot arrows. In some ways it is easier to keep her in cat form, because her hitbox is smaller while transformed.

Much of the appeal of Stray, I think, is that it is one of the few games that lets you get to play as a non-anthropomorphic animal character, and this is really the only other one I can really think of which is quite like that, barring maybe a few flash games.
