I love some Canadian Bacon... but, come on Sam. pineapple?!
When I want a pineapple pizza, I'll do it myself or strongly consider the place I'm getting it from.
Understand pineapple works with ham, but not the pineapple juices with the pizza base cooking stage. This is why some hate it. Most fast food places will cook it wrong and even people trying at home.
However, a ham roast might have pineapple rings and even cherries on it during cooking that. It's a well known fact to work together. The sweetness of a pineapple helps neutralize the saltiness of ham meat.
Pineapple juice however contains a powerful enzyme which actually starts breaking down the meat and will turn it to mush. Then the juice will also wet the pizza base and fail that to be cooked nice and crispy.
What you need to do if adding pineapple to pizza is ONLY use a fresh pineapple, not canned. Dry those freshly cut pineapple pieces on a paper towel, while you cook the pizza separately.
It's while the pizza is cooking, you should prepare the pineapple as an additional topping. Place the pineapple in a frying pan and add brown sugar to caramelize and glaze it. Optional also add in chilli flakes, toss and coat. This will dry out the juices too.
When the pizza has only 5 minutes left to cook, this is when you add the pineapple and an additional layer of cheese over top to melt it in.
The pizza base will remain nice and crispy while the topping will complement the ham with nice melted cheese and the perfect pizza pull.
