Are there nutrients in pork products that are missing in other meats if i don't consume them?
As my mother considers this product ill and stuff like that, and she says that i'll eat it only on occasion.

Bacon. Ribs. Pork chops. Pull Pork. Honey Glazed Ham. etc.

Why deprive yourself from eating such a delicious animal?

I do not eat a lot of pork, mostly fish for me. There are no nutrients in pork that you cannot get in other meats. Nutrient amounts vary between lamb, beef, pork etc, but amongst the most important is vitamin B12.

Used to eat them plenty back in the other town by buying from not religiously restricted reputables and now it's harder here, now we live in more of a rural religious here in Israel.

Pork is a red meat, meaning it's a bit more dense in protein and iron. However, both can be supplemented pretty easily. Even on a 100% vegetarian diet. Beef or deer would substitute just fine.

Or vegetables high in iron. For protein you can do dairy, eggs, nuts, and legumes (beans).

Liver is the best source of iron and vitamins, IMO.

It might be a different animal but it's still apart of big game. Beef, Lamb and Pork are all red meats which give proteins / iron (which is definitely important for muscle and blood) and we cannot live without it.

In hindsight why Veganism fails, because they're lacking iron materials and requiring special tablets and products. Which is very expensive and not worth it.

Although, consumption of any of these red meats are completely personal preference. Personally, I love pork. A good roast is amazing.

Smoked sausages and wieners are quite plausible as well, but the religiously approved alternatives here taste like crap, so i stick to the UA/RU shops as we have here, or religion free ones.

Offal is rich in nutrients yes however, also a required taste. Not a huge fan of liver, personally. Lol

Braunschweiger is the best, even if it's usually pork.

Mix it with ricotta and pipe it into cannelloni and smother with good marinara and shredded jarlsberg cheese and bake. <3
