I'd honestly recommend some of Steam's Multiplayer games, as they're usually tons of fun and have a lot of replayability and awesome gameplay.
Minecraft is an obvious one. But I might as well mention it.
Good for you for taking the time to play with your little brother and sister.
My niece and nephew are that age and I feel like 7 is that weird period where they're too big for the baby games but too young for the other games
You'll probably have to sit with them to show them things they find difficult but Kerbal Space Program is a fantastic learning program that schools use for educational purposes that should be fun to build things together and try blasting into space.
I also suggest Don't Starve Together because it is a very family friendly survival/crafting game in terms of art style and has a great crafting system and complex survival that keeps it very entertaining for older players but it is completely possible for your to float two other players on your own if they are too young or are learning the ropes. Even if you keep dying every few days (which you'll do a lot of anyway) it's still mighty fun. It also has a sandbox option where you can change it as easy as you'd like for your siblings too.
The Lego games are always a popular series as well, especially the Marvel Super Heroes one. :)

These are all very fun games to play co-op. Awesomenauts is 3v3 player vs player or player vs computer with difficulty settings, so if your siblings are having trouble fighting you can just turn it down. Dino Run and JumpJet Rex are racing games where you get to customize your dinosaurs with hats and the like, so I think it would be perfect for younger kids as well as you.

Castle Crashers is a little bit more mature with some crude humor and a little blood involved but nothing too terrible I don't think. There's some really cheap DLC skins you can get that are pretty kid friendly and tons of unlockable characters.
