I used to be that way about open world games. When the idea got popular, I was always so excited to play them, and I always think I'm going to enjoy them because they sound awesome, but for some reason I can't explain, I always get reeeally bored playing open world RPGs, like Elder Scrolls.
Maybe try playing some turn-based games with more unique mechanics. Try Persona 5, any of the Mario and Luigi games, or Chrono Trigger.

It's a real time, turn based dungeon crawler (it's free)
There's also real time, turn based RPG games with pause like Icewind Dale / Baldurs Gate.
Real time turn based game use turn based mechanics for what actions you can do in a set time while the game proceeds in real time.
I grew up playing old SSI turn based wargames, I guess what with the fast paced instant gratification offered these days in video games the subtle nuance of patience has been lost.
That game was hella fun.
Cus I agree on jrpgs, but I absolutely love turn based western RPGs like pillars of eternity 2 or divinity original sin. Or fallout 1 and 2. Arcanum. Those are good turn based RPGs imo, but completely different than games like earthbound or final fantasy
I'm not sure how it works, but you should arrive at some point, in which you invested so much time, it starts to grow on you.
But I'm not sure how you can accomplish this, if it just doesn't work for you.
