I'll be the third one to mention Berserk here (because, of course), but make sure that you watch the 1997 version, not any of that crap that came after. Also, if you'll like it, try Record of Lodoss War, the other great fantasy anime. However, anime in general has a lot of titles that inspired Dark Souls or were inspired by it. Japan is a tiny big country where everything and everyone is connected, more so in art.
The only movie which gave me some dark souls vibes, is tenshi no tamago.
But I wouldnt say it's a good movie. Atmosphere is great but beside that I didn't like the movie
