Basically this will be my first RPG,so I dont know much about this genre
True, it does offer tons of content, but it doesn't require even remotely that much time to play through it.
Can you? Yes. The game is just better with the DLC and mods.
No. No real grind. There's just a lot of content that people enjoy playing, especially with mods. Technically you can "beat" the main quest in something like 2 1/2 hours if you're just playing it and using fast travel, but there's much more to the game than just the main quest.
Chances are that the mods you were trying to use on minecraft were either badlyy optimized, or were very resource intensive.
