If you haven't seen Cowboy Bebop, you must. It is often considered the best anime ever made, and while it may not be like whatever anime you're used to, you have to keep with it. Seriously, it's great.
Once you're done watching that, you could try Samurai Champloo. It's directed by the same guy who directed Cowboy Bebop (Shinichiro Watanabe), and it is also very good.
This should be obvious, but you should also watch some Studio Ghibli movies if you haven't yet.
Their best movies are Princess Mononoke, Castle in the Sky, My Neighbor Totoro, Spirited Away, Nausicaa of the Valley of Wind, and, imo, The Wind Rises as well.
PS: Please do not limit yourself to watching only subtitles. I did that when I first started watching anime, but many of them (like Cowboy Bebop and Samurai Champloo) have dubs that are far, far better than subs. Ghibli movies also have some of the best dubs of any animation ever.
I've never seen Champloo, but from the few dubbed pieces I've seen it actually seems really good. Cowboy Bebop... Ahh, Cowboy Bebop. I was so bored. I'm sorry, I know it's supposed to be a masterpiece, but it bored me so much.
As for Ghibli, I'd argue that Kiki's is one of the better ones. I've seen Kiki's Delivery Service, Howl's Moving Castle, and My Neighbor Totoro. Totoro I found generally uninteresting. There really wasn't anything resembling a plot for the first hour or so. I actually enjoyed myself through most of Howl's and Kiki's.
